The amount of reactive substances with Thiobarbituric acid (TBARS / mg MDA/kg) in typical packaging peaked over than permissible range and reached to 2/27±0/05 mg after 35 days, Whereas the TBARS index was significantly lower in modified atmosphere packaging (P<0.05). The pH changes in treatments were descending and the same, during the evaluation. Entirely there was a significant increase in TBARS and TVB-N in typical packaging samples compared to modified atmosphere packaging. This indicates that fat oxidation during storage in typical packaging due to oxygen penetration into the package and the activity of the oxidative and enzymatic mechanism during storage. In sensory assessments, modified atmosphere packaging treatment obtained a significantly higher quality score in color, odour and texture (P <0.05). This result can be attributed to the effect of modified atmospheric packaging treatment on decreasing or stopping of biochemical activity. Totally, the modified atmosphere packaging as a selective treatment, increase shelf life for five days.}, keywords = {Silver carp,Superchilling,Modified atmosphere,Shelf life}, title_fa = {بررسی تغییرات کیفی گوشت چرخ کرده ماهی کپور نقره ای (Hpophthalmichthys molitrix) در دمای فوق سرما (Superchilling) در بسته بندی اتمسفر اصلاح شده و معمولی}, abstract_fa = {در این تحقیق تغییرات کیفی گوشت چرخ کرده ماهی در بسته­بندی اتمسفر اصلاح شده(به نسبت 50:5:45 برای گازهای N2:O2:CO2)و معمولی نگه داری شده در دمای فوق سرما (2– درجه سانتی ­گراد)مورد بررسی قرار گرفت.نتایج نشان داد که روند تغییرات ازت آزاد (TVB-N میلی­ گرم / 100 گرم نمونه) با استفاده از روش فوق­ سرما در بسته بندی اتمسفر اصلاح شده موجب کندتر شدن تشکیل مواد ازته فرار گردید و افزایش این شاخص در بسته بندی معمولی در طول بررسی معنی­ دار بوده است (0/05>P). مقدار مواد واکنش ­گر با تیوباربیوتیک اسید (TBARSبرحسب میلی­ گرم مالون­دی ­آلدهید/کیلوگرم نمونه) در بسته ­بندی معمولی پس از 35 روز ازحد مجاز گذشت و به 0/05 ± 2/27 میلی­ گرم رسید. در حالی که بسته ­بندی اتمسفر اصلاح شده به صورت معنی­ داری کم تر بود(0/05>P). تغییرات pH در هر دو تیمار در طول زمان یکسان و نزولی بود. به طور کلی افزایشمعنی­ داری در میزان TBARS وTVB-N در نمونه­ های بسته ­بندی معمولی نسبت به بسته ­بندی اتمسفر اصلاح شده مشاهده شد که این امر بیانگر اکسایش چربی در خلال نگه داری در بسته ­بندی معمولی به دلیل نفوذ اکسیژن به درون بسته بوده و حاکی از فعالیت مکانیسم اکسایشی و آنزیمی در هنگام نگه داری می­ باشد. در ارزیابی­ های حسی، تیمار بسته­ بندی اتمسفر اصلاح شده به­ طور معنی­ داری امتیاز کیفی کل بالاتری از نظر فاکتورهای رنگ، بو و بافت کسب نمود (0/05>P). این نتیجه را می توان ناشی از تاثیر بیش تر اتمسفر اصلاح شده بر روند تاخیر و یا توقف فعالیت­ های بیوشیمیایی نسبت دانست. در مجموع، بسته ­بندی اتمسفر اصلاح شده در دمای فوق­ سرما به عنوان تیمار منتخب بوده و زمان نگاه داری را به مدت 5 روز افزایش داد.}, keywords_fa = {کپور نقره ای,فوق سرما,اتمسفر اصلاح شده,زمان ماندگاری}, url = {http://www.aejournal.ir/article_89945.html}, eprint = {http://www.aejournal.ir/article_89945_fa499f1c918a77f026ed8a5948a38809.pdf} }
