Fish were fed with common carp commercial diet of for one year. At the end of experiment, protein and carcass moisture content were significantly higher in common carp, as well as ash and total lipid in giant gourami. Total omega-6 fatty acids were registered higher in common carp than giant gourami fish, significantly. There were no significant difference in total omega-3 fatty acids, levels of high unsaturated fatty acids and EPA and DHA content at two species. ω-3/ω-6 ratio was significantly higher in giant gourami than common carp. In contrast, the ratio of polyunsaturated fatty acids to the saturated fatty acids of common carp was more favorable than giant gourami, and the difference was statistically significant. In conclusion, according to the EPA and DHA content in the two tested species, and also the promotion of the ratio ω-3/ω-6 in giant gourami, due to the qualitative features and nutritional value of giant gourami, it can be considered as a valuable farmed fish.}, keywords = {Cyprinus carpio,Osphronemus goramy,Fillet quality,Fatty acid profile}, title_fa = {مقایسه کیفیت فیله و پروفیل اسیدهای چرب ماهیان پرواری گورامی عظیم الجثه (Osphronemus goramy) و کپور معمولی (Cyprinus carpio) پرورش یافته در استخرهای بتونی}, abstract_fa = { به منظور تعیین ارزش غذایی ماهی گورامی عظیم الجثه به عنوان یک گونه خوراکی جدید و مقایسه آن با کپورمعمولی به عنوان یک گونه رایج پرورشی، بچه ماهیان گورامی عظیم الجثه و کپورمعمولی در دامنه وزنی یکسان (به ترتیب 0/27±5 و 0/17±5/02 گرم) خریداری و به استخرهای بتونی معرفی و در شرایط کشت تک گونه ای شامل 2 تیمار آزمایشی هریک با 3 تکرار با جیره تجاری ماهی کپورمعمولی به مدت یک سال پرورش یافتند. در پایان آزمایش، پروتئین خام و رطوبت لاشه در ماهی کپورمعمولی و خاکستر و چربی خام در ماهی گورامی عظیم الجثه به طور معنی داری بالاتر بود (0/05>P). مجموع اسیدهای چرب اُمگا 6 در ماهی کپورمعمولی به صورت معنی داری (0/05>P) بیش تر از ماهی گورامی عظیم الجثه مشاهده شد. مجموع اسیدهای چرب اُمگا 3، سطوح اسیدهای چرب غیراشباع بلندزنجیره و میزان EPA و DHA در دو گونه مورد سنجش فاقد اختلاف معنی دار بود (0/05P). در مقابل نسبت اسیدهای چرب چندغیراشباع به اشباع ماهی کپورمعمولی در مقایسه با ماهی گورامی عظیم الجثه دارایسطوح مطلوب تری بوده که اختلاف مذکور به لحاظ آماری معنی دار بود (0/05>P). در مجموع، با توجه به محتوای EPA و DHA در دو گونه مورد سنجش و نیز ارتقای نسبت اُمگا 3 به اُمگا 6 در ماهی گورامی عظیم الجثه، محتملاً می توان به لحاظ ویژگی های کیفی و ارزش غذایی ماهی گورامی عظیم الجثه را در زمره ماهیان پرورشی ارزشمند قلمداد نمود.}, keywords_fa = {ماهی گورامی عظیم الجثه,ماهی کپور معمولی,کیفیت فیله,پروفیل اسیدهای چرب}, url = {http://www.aejournal.ir/article_95932.html}, eprint = {http://www.aejournal.ir/article_95932_36baaac25a28aebbb3c55415bb04ee87.pdf} }
